Le Monument

Chef Julien Montbabut is a French culinary master whose career is built on an elite Parisian foundation. He trained under icons like Christian Le Squer at the three-Michelin-starred Pavillon Ledoyen and refined his craft in other Michelin-starred Parisian kitchens.

In 2011, he assumed his first role as Head Chef at Le Restaurant, taking full responsibility for a Michelin-starred kitchen. In 2018, he embraced a major new challenge by relocating to Porto as the Executive Chef of THE ONE Monumental Palace (formerly Le Monumental Palace).

Leading the hotel's opening alongside his wife, Pastry Chef Joana Thöny Montbabut, his perseverance and rigorous work were swiftly recognized. His restaurant, Le Monument, earned its first Michelin star in 2022 (renewed through 2025) and was awarded Two Repsol Suns in 2025, cementing its place among Portugal's top dining destinations.
